Goodbye 2010 and Welcome 2011

I bid sweet farewell to 2010 and welcome the new year with hope and smile this year I like everyone faced joys tribulations agony happiness joy laughter and thank Lord for he has given us a year of anticipation I hope following year will be be good and I will be the change Lord wants me to be Jesus and our heavenly father I ask for forgiveness for my shortcoming I havent be a good child this year but I promise to be good or atleast better than before, hep me Lord to become a good child and better human being and also help me with my vocatin I want to apply for my  foreign visa and improve work prospects in a foreign land help me lord to gain gainful employment this coming year and make able to fulfill others dreams in a process fulfill your universal dream peace love joy and happiness for this I make my humble prayer to Jesus Christ our Lord. Christmas Season about to begin let us welcome our Lord Jesus Christ Son of God

Christmas season is around the corner we are soon to going to welcome the Lord Jesus Son of God and Messiah of mankind who has taken the form of flesh and body and has become  a human baby born to  theVirgin Mary and Joseph a simple family  to experience life of human beings and we has humans have erred him so we ask forgiveness for our sins and promise to be good human beings and we all welcome our true king our saviour Lord Jesus who will be born once again this time not in Bethlehem but should be born in our hearts are we ready to welcome the Lord has baby Jesus is busy knocking the door of our hearts are we ready to listen to him I guess we are more busy with our wordly life and its whims and fancies that we forget to spend time with own families when will we have time for our Lord if we can remove time for all things I am sure we can remove a few minutes to thank the Lord who has given us so many countless gifts and most precious gift from them is the gift of his only son Lord Jesus who became man and who sacrificed himself so that we can enjoy wordly pleasures. Let us all make it a promise from this very moment to thank our heavenly father for giving us all the precious gifts we have and for little that we lack let us pray to God that one day we will be able to make ourselves proud to be the sons and daughters of our heavenly father ABBA by practcising daily what his son Jesus has taught  us" that is to love one another has I have loved you" these words of wisdom of Jesus is  true in todays times of hatred jealously power egos deceit greed violence abuse anarchy against all evils which is present in the world Lord save us make us strong enough to fight the forces of evil please Lord we need your love courage and strength to fight evil which ruling in everyones hearts God help me to be your disciple and let us all be able to worship God in our hearts and minds and fight for humanity and peace in this world Lord we make this pray in name of Jesus christ your son my Lord AMEN

Winter food for the soul

Winter is season to experiment has weather is cool and one can prepare hot meals for family and friends especially grilled food and hot piping tea coffee soups and milk based drinks are a must in every household I will be sharing some of my winter family delicacies with all of you shortly. I hope you will make them and enjoy them has they do in my family. Winter according to me is time to be cosy in a blanket having piping hot cocoa in one hand and eating freshly oven baked cookies in the other. I also like to have chai with namkeen and piping hot snacks. Soon I will be writing some recipes till then enjoy winter time holidays and seasons greetings to all of you I am antcipating for a new year blast also christmas isnt far Yipeeeeeeeee my favourite season has come.

Winter Soup for the soul
 Ingredients :
1 cup boiled chicken
1 cup boiled macroni
1 onion chopped finely
1 tsp garlic chopped finely
1 tsp ginger grated
1 tsp mixed dry herbs
1 cup chopped tomato
2 tsp coriander leaves
1/2 tsp pepper
1 seasoning cube
2 tsp butter
2 tsp oil
salt to taste
3 cups  water
Method :
In saucepan pour in oil and butter and add garlic and ginger then add onion  fry till turns light brown then add tomatoes add dry herbs, spices and seasoning then add chicken and fry for 2min then add  macroni pasta and water and boil and add coriander leaves and serve piping hot with garlic butter bread.

Hot chocolate milk
Ingredients :
500ml boil milk mixed with 2 tsp of cocoa
2 tsp fresh whipped cream for garnish
2 tsp chocolate syrup
2 tsp chocolate liquoer or brandy
Method :
In a bowl add above ingredients and mix well with blender and serve hot by garnishing with whipped cream and chocolate shavings.

Pakoras
Ingredients :
1 cup paneer cut into strips
1 cup capsicum strips
1 cup babycorn strips
1 cup cauliflower flowrets
1 cup potato slices
1 cup brinjal slices
1 cup bhindi also stuffed with chilly powder and amchoor
1 cup bhavanagri chillies stuffed chilly powder and amchoor
2 cup besan
1/2 cup riceflour
1/2 cup wheat flour
water added for batter consistency
salt to taste
1/2 tsp ajwain
1/2 tsp haldi
1/2 tsp jeera
oil for deep frying
Method :
In a kadai boil oil till ready for frying  and then  in a bowl mix besan and dry spices and  2tsp hot oil for mohan  then dip the veges in the batter and deep fry till crisp serve with ketchup and green chutney

Masala Chai
Ingredients for Chai masala :
20 gm white pepper
20 gm soonth
100 gm black pepper
10 gm cinnammon
20 elachi
10 gm nutmeg
Roast and grind above ingredients into fine powder and yield is 200gm
Ingredients for Chai :
1 cup water
1 tsp grated ginger
2 tsp tea leaves
2 tsp sugar
1/2 tsp chai masala
1 glass milk
6-7 mint leaves
Method :
In a saucepan boil water and add tea leaves and boil then add the above ingredients and boil for 2 min and strain tea and serve piping hot  with pakoras

Til or Sesame Laddoo
Ingredients :
1 cup white sesame or Til roasted
1/2 cup black sesame roasted
1/4 cup jaggery
1 tbsp sesame oil or desi ghee
1/2 tbsp soonth powder
1/2 tbsp gantola powder
1 tbsp magaz or melon seeds
1 tbsp Badam
Method :
In a kadai add ghee or oil and melt jaggery  then add soonth and gontola powder then add roasted sesame and add badam and mix well then remove from flame and keep to cool on a greased tray then when cooled make balls and serve.

Handi Biryani 
Ingredients :
1 tbsp ghee
1tsp whole spices mixture of  bayleaf cloves cinnamon and elachi
1 onion chopped finely
1 tbsp ginger garlic paste
1 tbsp kitchen king masala
pinch of haldi
1/2 tsp pepper powder
1 tbsp red chilly powder
1 tbsp kasoori methi
3 tomatoes chopped
1 1/2 cup mixed boiled vegetables or  2 cups cooked chicken pieces
1 tsp green chilly chopped
6-7  cloves and piece of coal in a vati add tsp of ghee
1 cup cooked rice 
Method :
In a nonstick handi add ghee and whole spices then add onion and fry till brown then add ginger garlic pastes and all dry spices then tomatoes and fry till leaves oil then add kasoori methi and vegetables and add then give a smoke effect to vegetable by keeping vati wih hot coal on it putting cloves adding ghee to it then cover the handi and give them for 2 min then remove the vati with tongs and add rice and split green chillies and coriander and pudina leaves and tsp of ghee and  2 -3 tsp kesar dissolved iwater for flavour and close handi with lid and keep to cook for 2-3 min on fast flame and 3-4 min on slow flame. Serve with raita

Carrot Halwa 
Ingredients :
1 kg  carrot
250 ml milk 
250 gm sugar
1tsp elachi
1/2 cup dryfruits
1 cup desi ghee
Method :
In a kadai add ghee then add carrot and fry till water dries then add sugar and milk and dryfruits and cook  till the mixture leaves sides add elachi and close flame and garnish with dryfruits and serve hot.

Cold Winter comes knocking in December

Hi friends winter its time of the year for fun and family  time where everyone is joyous but this time I am sad and  I have lost the zeal and enthusiasm has stress and worries are encircling my life there is sadness in my heart how I wish and pray there came an angel and solved  all my tension or else I will be lost in this wave of darkness right now there is no light in this dark tunnel my heart is aching I wish I wasnt alive to bare this suffering oh Lord where are you dad your child is crying and has lost all hope to continue please forgive your child Lord and please come back into my life and to rule my heart Lord Jesus your child will not survive without you come to me my lord and saviour. Please help me win today it will give me new zeal of life and new begining for change within myself so that I can be the change that the lord expects me to be God willing I will come  has a winner today for the sake of all those hopeless souls who need a voice I shall be that voice and change Lord this is a promise I make to myself and my creator please trust in me I make this humble prayer to God. AMEN

Advent Prayer to our Lord Jesus Christ 
Welcome Lord God Son of our heavenly ABBA our heavenly father and leader of all mankind Lord Jesus Christ. We bow before you are creator and saviour our Lord Jesus Christ and welcome your presence in our lives and hearts. Lord you have made us your worthy successors on this earth but without your holy presence in our lives our life is empty please Lord make us holy with your divine image and your patience has been marvellous and your life is a inspirations for whole human kind. God bless us with your words and your holiness and now this selfish world needs you even more so Lord please come and save us from all dangers and people who want to ruin our peace and tranquility and destroy our existence Lord help us to fight such evilness which seems to be ruling in most hearts which are hardened by evilness and ungratitude please Lord forgive these people for they knowingly and unknowingly they are hurting people and making them vunerable to end their lives. Please God come on this earth we need your holy presence please forgive us God we are not worthy only say a word and we shall be healed. Pope Benedict XVI Message for Advent Season
Pope Benedict XVI welcomed the season of Advent during the Angelus prayer on Sunday Nov 28,  remarking on the nature of “expectation” and calling it a “profoundly human” experience.The Pontiff opened his comments by discussing what he called the “dual nature” of the Advent season. The Church during this time, he said, focuses both on the first coming of Jesus as an infant born of the Virgin Mary and also on “His glorious return, when he will come to judge the living and the dead.” The Pope also recalled how the nation of Israel had a strong expectation of the Messiah before Christ's birth, hoping this figure would save them from moral and political slavery. “But no one could have imagined that the Messiah would be born of a humble girl like Mary, who had been promised in marriage to the good Joseph,” he said. “Neither could she have imagined it; yet in her heart the expectation of the Savior was so great, her faith and hope so ardent, that in her He could find a worthy mother.”Mary is “the woman of Advent,” the Pope declared, urging those in attendance to “learn from her” in order to “live a daily life with a new spirit, with feelings of profound expectation which only the coming of God can satisfy.” “There is a mysterious correspondence between the expectation of God and that of Mary, the creature 'full of grace,' completely transparent before the Almighty's plan of love,” he said.

Thank you Lord for giving us all the gifts this year and for family and friends who stood for each other in times of difficulties and in times of happiness. Lord Heavenly father we thank you for all bountiful gifts we have received from you day in and day out. Lord bless us and our family and all food and grains crops we have offer before you and water we received in form plentiful rains this year for bumper crops. Lord bless us in times of recession may our fanily and friends who have lost jobs and facing difficult times with rising costs and no earning members  be able to celebrate this thanksgiving day with smae fervour has us. Lord welcome your presence in our life. Lord please bless us all living beings of this world we need you r love an dyour support in form blessing my Lord we thank you and we bow in reverence before our heavenly father Abba we love you,we adore your,we thank you, praise you dad and your son Lord Jesus christ and the holy spirit who gives us strenghth in this trying times where we are not safe in this world but Blessed Virgin Mother Mary  and power bestowed by you  on her  and all angels and saints causes us great relief has their presence in our life makes us feel safe and sound in these uncertain times. Chocolate Almond Fudge
1 teaspoon butter
2 teaspoons cocoa
1 can  sweetened condensed milk
3 cups semisweet chocolate chips
1 teaspoon Pure Vanilla Extract
1/2 cup boiled and peeled almond slices

Method :
In a saucepan melt butter add chocolate and condensed milk and add almond slice and vanilla extract then wait till chocolate melts and then remove from heat and pour in greased foil  tray and when cool referigerate and when done cut into pieces.

Old fashioned doughnuts :
1/2 cup cream
1/2 cup buttermilk
1 cup sugar
3 eggs
1 teaspoon vanilla essence
4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Oil for deep frying

Method : 

In a large bowl, beat cream and buttermilk until smooth. Beat in sugar until smooth. Beat in eggs and vanilla just until combined. Combine the flour, baking powder, baking soda and salt. Gradually add flour mixture to buttermilk mixture just until combined (dough will be sticky). Cover and refrigerate for 2-3 hours.

Turn dough onto a well-floured surface; knead for 2-3 minutes or until smooth. Roll out to 1/2-in. thickness. Cut with a floured 2-1/2-in. doughnut cutter.
In a kadai, heat oil and  Fry doughnuts, a few at a time, for 3 minutes or until golden brown on each side. Fry doughnut holes until golden brown. Drain on paper towels. Dust with confectioners' sugar if desired. Yield: About 1-1/2 dozen doughnut



Goan food Carnival

 India will  be celebrating 50th Goan Independence day celebrations this December
Goa should be visited atleast once in ones lifetime and  goan  food should be eaten or relished atleast once in while especially when one wants to relax especially during winters or a sunday afternoon and one must try to bring goan atmosphere switching on to goan music  one tends forget to  listen  to the goan mando which is the  favourite music most goans  enjoy and everyone likes listening and dancing to its tune many of my friends including me love goan people enjoy goan music food culture and portuguese style villas beaches and carefree life and I always noticed that many weddings people of all faith jump at every given opportunity to shake a leg to the goan beats. I remember a goan song "oui sahiba potlodi veta damaoliya lagnak veta maka sahiba vat kelana."

 Sweet and Sour Chilly Pork fry :
1kg pork cooked with 1/2 tsp haldi and salt
6 onions sliced
1 tomatoes chopped finely
6 green chillies
1cup tomato puree optional
5 cloves garlic
2  tsp ginger cut finely
2 bayleaf
6 cloves
5 peppercorn
3 cinnamon sticks
2tsp red chilly powder
2tsp dhana jeera powder
2tbsp vinegar
1/2 tsp sugar
 Method :
In a pan oil fry onion till brown add garlic ginger chillies and whole spices then add tomatoes and puree and spices at last vinegar and  add sugar  for taste.Then serve with freshly baked bread or hot pav and salad.

Pomfret Rechada Masala :
2 large Pomfrets fresh catch
2 dollops of butter
2tbsp oil
1 lemon juice
For the paste
2tbsp vinegar
5-6 cloves of garlic
1 inch ginger
15 kasmiri red chillies
2 cinnmamon sticks
6-7 cloves
salt
Method :
Grind the rechada masal and apply the rechada masala to the pomfret and then in a hot pan add butter and oil then add fish and fry till cooked and squeeze lemon and garnish with coriander leaves and serve salad.

Goan Prawns Kaldeen :
1 cup fresh prawns
1 cup coconut milk
1 onion
1 tomato
1 small green chilly
For the paste grind
1tsp peppercorn
1/2 tsp jeera
a few coriander stems
1tsp coriander
5-6 garlic
1 inch ginger
4 green chillies
1 tamarind small ball
Method :
In a pan add oil add onion and fry then add tomato and green chilly and add prawns fry 2 min then add masala and fry till leaves oil then add the coconut milk and when done serve with rice.

Kid Friendly Recipes

Kid these days are very ficky eaters its difficult to pleas them I have a way to feed chidren healthy digestive biscuits, or oats or barley ragi or now horlicks biscuits the choice of healthy biscuits is infinite by decorating them with icing kids will be tempted to eat healthy food. Even kids can be used for following task they will become creative
Healthy Icing for Biscuits :
150 gm glucon D
2tbsp warm water
food colors like pink green orange and yellow  2 or 3 drops
essence like strawberry, pineapple,orange,lemon a 2 or 3 drops
Method :
In a mixing bowl add above ingredients and use hand blender and whisk the mixture till smooth mixture and then remove the mix in seperate small bowls and add color and essence of choice like pink for strawberry,green for  pineapple and yellow for lemon and so on.

Healthy Pizza base :
Use ready madeWhole wheat pizza base or Multi grain pizza bread or make a pizza base as given below
Ingredients :
1 cup wheat flour
1 cup maida
1tsp baking powder
1tsp fruit salt
1/2 tsp salt
2 tsp oil
warm water 
Method :
In a mixing bowl add the following ingredients and first mix salt with flour first then add the baking powder  and fruit salt in the warm water one can add buttermilk or dahi also while kneading  and then roll the dough and make a roti and bake 180 for 20 -25 minutes and see when nife come clean on poking dough is cooked.
Pizza toppings :
2tbsp chopped tomato
2tbsp chopped capsicum
2tbsp chopped onion
2tbsp chopped and boiled corn
2tbsp chopped and boiled mushroom
2tbsp sausage cut into slice optional
2tbsp salami
2tbsp ham  cut in strips
2tbsp bacon cut into squares
4tbsp mozarella chesse
4tbsp grated cheese
1/4tsp paprika
1tsp oregano
salt to taste
2tsp tomato or pizza sauce
1tsp olive oil
Method :
Take a pizza base apply pizza or tomato sauce and and toppings of your choice add paprika oregano then olive oil sprinkle salt  and then add both the cheese and bake in the oven at 150 degree for 10 min or till cheese melts.
Pizza Sauce :
1 large onion
1tsp garlic
1/2 kilo tomatoes
1/2tsp thyme
1/2tsp oregano
1 bay leaf
2tsp olive oil
salt to taste
1/2 tsp sugar if tomatoes are sour
Method :
In a pan add olive then add garlic and onion and saute till turns pink then add tomatoes and herbs and salt to taste and cook till tomatoes becomes a mixture and keep to cool and then process the mixture and use.

Strawberry Icecream :
Ingredients :
250 gm strawberry or any fruit pulp like blueberries or rasberries or mango
250ml cream
250ml milk
1 vanilla pod
5 egg yolks or use 200gm condensed milk and no sugar for eggless
90gm sugar
Method :
In a bowl mix the following ingredients and blend it with a hand blender and freeze the mixture in a air tight container for 2hrs then remove and blend again with a blender and again pour mixture in a airtight container close and freeze for 5-6hrs and serve.

Oh I loved this holiday weekend

Hi friends I had wonderful holiday weekend and loved surprises and gifts I received from family and friends.  I thank God for his blessing and his love he bestows on me through his showers of blessings he showers on me through my family and welllwishers. I also thank Mom has  she prepared lovely food especially all festival delights to savour whose taste is still lingering in my mouth. I received Mithai, clothes and surprise gifts from my family especially my brother who is in US it made me emotional has I missed his presence. Wow this diwali was really one of best and memorable diwali this weekend I hope there are many more  happy surprises in store for me in future. I am now really anticipating and looking forward  to Thanksgiving, Christmas and New year. God bless all families just has you  have blessed mine and let  all  families enjoy health, peace and prosperity and spirit of sharing. Because I always enjoy joy of sharing I like to share my new clothes toys books and even some old but in mint condition goods with those who are unfortunate and underpriveleged I even collected some little savings nothing great but  still I will  soon donate  this savings to an ngo which works for social causes for poor and marginalised individuals. This is a promise I have made to myself. There is no other joy than  the joy of giving and sharing your time energy and things with those who are unfortunate and underpriveleged.

Especially Mrs Michelle Obamas dance with kids was icing on the cake she is woman of substance her speech to students was inspiring especially her own story and humble beginings touched my heart she is my idol her determination strength and support is main reason for Barack Obamas sucess she is wonderful human being and personality is awe inspiring Mam we love you and we pray for you and your family that you be given same love and affection which you showered on us Indians not only  by your own country men but  world over. We all Indians wish you make may more visits to India especially with your kids in tow next time. I am proud that Bapu our father of our nations touched your hearts especially seen Mam Michelle throwing flowers on his tomb twice I hope message of Bapu of non-violence and peace reaches all over the world. Happy Diwali and Mast diwali Dhamaka Recipes for all to relish

Kesar Badam Peda
120gm butter
350ml condensed milk
2cups milk powder
badam to garnish
kesar
Preparation :
In a bowl add butter condensed milk and milk powder amd microwave for 1 minutes then remove and stir microwave another 10 min then remove cool it and referigerate for and hour and shape pedas add kesar strand and badam for garnish

Chocolates for diwali :
1cup dark chocolate
1cup milk chocolate
Rum soft centred chocolate
40 gm  dark chocolate
50gm cream
4-5 drops rum essence
microwave cream for 30 sec then add dark chocolate
Pineapple centred chocolate
1/2cup icing sugar
1/4tbsp water
4-5 drops pineapple essence
 Blueberry  centred chocolate
2tbsp blueberry jam
2tbsp warm water
make a sauce of the above ingredients
Toffee centred chocolate
 2tbsp sugar melted into caramel
3-4 drops water
2tbsp condensed milk
2 drops butterscotch syrup
make a sauce of the above ingredients
Nutty chocolate
100gm dark chocolate
75gm nuts like badam raisins peels cashew
Festival flavour chocolates
1 cup white chocolate
1/2 tsp kesar emulsion
1/2 tsp khus syrup
1/2 tsp rose essence
1/2 tsp gulkand
1/2tsp elachi
1/2 tsp almond essence
1/2 tsp pista essence
Preparation :
In chocolate making plastic moulds pour white chocoate with help small spoon into heart shape or fower shaped mould then shake or tap the tray to remove the air bubbles keep in fridge for 5 min then add any of soft centre you like of your choice above e.g. rum centre tap the tray and keep for 5min in fridge to set and remove again pour dark chocolate tap the tray and keep in fridge for 5min and serve
In the chocolate making mould pour white chocolate mixed with rose essence or any falvouring of choice then tap the tray and keep in fridge for 5 min then remove add dark chooclate and  tap the tray and keep  in the fridge for 5 min and serve. Decorate chocolates with cellophane paper or color wrappers tie bows or ribbons or decorative wires and serve in basket or as a decorative boquet.

Jalebis
2 cups semolina
1 cup maida
2tbsp besan
warm water to make thick batter
2tbsp dahi
1 bowl thick Sugar syrup
1/2 tsp elachi
1/2 tsp kesar emulsion
Preparation :
Mix above ingridients and make a thick batter and keep to ferment 8 to 10 hours then after fermentation add 1bsp oil and color and salt to taste and make jalebis pouring batter in a jalebi making bottle and deep frying  circular jalebis and dip in sugar syrup serve with nuts and kesar strands

Phirni:
2 cup cooked rice
2 cup milk
1 cup sugar
200 gm fried mawa for 2min
1tsp elachi
1tsp kesar
salt
badam for garnish
Preparation:
In a kadai mix above ingridients and boil 10 minutes then add elachi and kesar  and serve cold garnish with badam and dryfruits and silver foil.

Orange Malpua :
1 cup maida
3tsp rice flour
3tsp mawa
3tsp dahi/curd
1tsp orange peel 
desi ghee for frying 
Sugar syrup :
2 cups sugar
1/2 cup or 1/4 cup water
make two thread consistency syrup
Garnish :
1 orange slices
1/4 cup badam
Preparations :
In a bowl add above ingredients and mix well keep aside for 30 minutes then take a kadai and pour ghee and start making circular malpus or pancakes and deep fry or panfry as you like then serve with sugar syrup and decorate with orange slice slices and badam slices for garnish


Pista Gulab Jamun :
200gm mawa
2tbsp sooji soaked in 2tbsp milk
2tbsp maida
1tsp elachi 
melted chocolate and pista for garnish
Preparations :
knead above ingredients and mae a smooth dough and shape into balls by greasing your palms with ghee then deep fry the jamuns in low flame till golden brown you can stuff jamuns with nuts or chocolate or toffee or sugar crystals. serve gulab jamuns by dipping in chocolate and rolling it in pista slices with help of toothpick

Ghiya/doodhi  ki Burfi :
500gms Ghiya
150gm sugar
1 to 2 tsp ghee
250gm mawa
1/2 tsp elachi 
3 to 4 drops green color
silver foil
Preparations :
In a pan add ghee and fry grated dudhi till the water dries then add mawa and sugar and fry till leaves sides then close flame add green color and elachi and serve with silver foil on greased tray when cool cut square shape barfi pieces.

Diwali Dhamaka coming shortly

Hi friends shortly I am starting the diwali dhamka where I will be telling story behind festival how it is celebrated in India by all communities without any biases of  caste religion race gender or creed. I will be giving some easy recipes for diwali festival and revealing culture behind the festival.

Diwali is festival of lights and women make rangoli designs infront of their houses considered welcome sign for good fortune and children burst fire crackers and gorge on delecious faraal or meethaiya which are famous in Diwali. The whole atmosphere during festival is of joy and brotherhood it symbolises truth triumphs over evil. The opportunity to meet and greet friends relatives and exchange gifts an presents and celebrate festival with family. It also time of tidying cleaning of homes and decorating it with diyas or oil lamps colorful scented candles and flowers and houses are painted with fresh coat of paint and time for shopping for gold ornaments new clothes or household iteams and sweetmeats for family. Some people buy fruits dryfruits chocolates and mithai for friends and loved ones. Its basically family time and time for celebration for family. Wow I have memories of diwali. The only drawback is noise and air pollution due to bursting crackers. I urge children not to play with crackers since dangerous and these crackers are also harmful  and hazardous for health but the main reason is that the cracker industry employs child labourers who work in hazardous conditions and children one should protest against those who violate child rights.

Meethai

Laddoo :
1 cup wheat flour
1 cup jaggery or gur
1 cup ghee
1/2 cup edible gum
1/2 cup dessicated coconut
2tsp badam pista and kaju powder
1tsp saunth or ginger powder
1tsp khuskhus powder
1tsp cream
10-12 badams

Preparation :
Take a pan heat few tsp ghee and fry the edible gum and keep aside then add another tsp ghee and fry wheat flour and keep aside melt 1tsp ghee in a pan and add gur to melt then add cream  further add wheat flour and  edible gum and dessicated coconut. Remove from the flame add saunth khuskhus and dryfruit powder add sliced badams and the remaining ghee and mix together then shape  mixture into balls or laddoos by applying ghee to hands.

Tip: add 1/4 tsp of elachi and pista for decoration and serve in paper cups.

Angoori Basundi
1/2 litre milk
1/2 cup condensed milk
2tsp cornflour dissolved 2tsp milk
10-12 mini rasgullas
1/2 tsp elachi
sugar to taste
kesar few strands dissolved in milk
2tsp Pista Badam slices 

Preparation :
In a saucepan heat milk and add cornflour solution then add condensed milk, sugar and kesar dissolved mixture and boil for 5 min . Keep aside to cool and then add elachi and rasgullas and referigerate for  2-4hrs and garnish with pista badam slices.

Sandesh :
1 cup Paneer
1/4 cup icing sugar
1/2 cup milk powder
1/2tsp milk masala
1tsp kesar
2tsp dryfruits

Preparation :
In a  mixer add ground paneer then add icing sugar milk powder and milk masala and kesar and cook in a nonstick kadai till becomes a ball and remove from flame and roll it on a plastic covererd surface and cut with different cookie cutters and decorate with dryfruits. and serve in colourful paper cups.

                                            Festival Fervour last week

Last week was busy with festivals around the corner especially Durgashtami and Dusshera. The end of evil and triump of good over evil and awaiting of kingdom of God to come. There is joy in our hearts and our minds that goodness has won over evil and it is supreme truth that God is ruler of this earth and heaven and it is God who is good and its God who wins over evil and  devils and devil spirits who are killed and sent into hell for playing  havoc in lives of innocent people. Atlast God will be a winner like always he is eternal. Come rejoice and welcome our mother she is our devi our goddess eternal mother of God.  

                                                Prayer to God
God is one and all are one come all let us pujo our God our creator he is supreme being  of the trinity. Lord  we welcome you are saviour come and rule our hearts and minds we are distressed by evil within us come triumph over our evil Lord bring us joy and light in our hearts and minds come Lord your children our awaiting for your presence in their lives. Chinese Fare for Today

Here are some delecious and easy to make Chinese recipes which are Indianised for Indian palates.


Chilli Chicken :

1 cup chicken dusted in 1tsp flour and fried for 2min keep aside
1 cup green yellow red pepper
1tsp garlic chopped
1tsp ginger
1tsp green chilli
1 cup green spring onions
1 tsp corn flour slurry
1 tsp soy sauce
1/4 cup coriander leaves
1 stock cube
salt and pepper to taste
3tbsp oil

Preparation :
In a kadhai add oil add ginger garlic chilly half quantity of spring onion fry for 2min then add pepper and cover lid add slurry also add maggi cubes add salt and pepper to taste. Then garnish with coriander leaves and remaining green onions.

Veg Sweet and Sour :
1 cup  steamed mixed vegetables cabbage cauliflower carrot beans corn
1 cup onion cut pearl shaped1 cup sweet sour sauce
1 cup colored pepper
1tsp green chilli
1tsp garlic
1tsp ginger
 salt and pepper
1tsp tomato sauce
2tsp oil
1/4 cup coriander leaves
1 stock cube

Preparation :
In a kadhai add oil onion chilli ginger garlic pepper fry till 2min and then add sweet  and sour sauce add cube and add salt and pepper add coriander leaves. garnish with fried noodles and green onions

Sweet and Sour sauce :
1/2 cup sweet pineapple juice
1/2 cup tomato puree
salt and vinegar to taste

Preparation :
Mix about ingredients and boil for 2 minutes and keep aside. Can be used in many chinese style recipes.

Combination Rice and Noodles :
1 cup noodles tossed in schewan sauce
1 cup fried rice
1 cup mixed vegetable or chicken
1 tsp schewan sauce
1 cup spring onion
1 tsp tomato sauce
1tsp chilli sauce
1tsp garlic
1tsp ginger
1tsp green chilly
3 tbsp Oil
1 stock cube

Preparation :
In a kadhai oil  chilly ginger garlic and spring onion fry 2min then add schewan sauce tomato sauce chilli sauce and then add mixed vegetable or chicken add cube add rice and noodles and the toss for a while and garnish with green onion

Vrat wala Khana recipes

Vrat ka khana recipes:

Puri :
1cup kuttu ka atta
1cup singhara ka atta
2tbsp ghee
water
rock salt to taste
Desi ghee for frying

Preparation:
Add flours together add hot ghee for crispy puris and salt to taste and add water till it forms a firm dough and make small balls and make puris or circles and fry till crisp. Serve with Rabri or Aloo ki sabzi.


Aloo ki Sabzi:
250 gm boiled and cubed potatoes
2tsp desi ghee
1/2 tsp jeera
1tsp green chillies
1/2 tsp ginger
rock salt to taste
1/2 tsp red chilly powder
1/2 tsp amchoor powder
Fresh Coriander leaves for garnish

Preparation:
In a kadhai add ghee and then add jeera and when it splutters add  green chilly, ginger  and fry  then add the dry spices lastly  add the boiled potatoes and fry for 2 min. Then add fresh coriander leaves for garnish and serve with hot puris.

Ratalu Kheer:
Sweet Potato or Ratalu grated 2 cups
1 litre milk
2 cups coconut milk
sugar to taste
Badam 2tbsp
Pista     2tbsp
Charoli  2tbsp
Kesar elachi syrup 2tsp Ghee     2tbsp


Preparation:
In a kadhai add ghee then add grated sweet potato and fry for 2 min and then add milk add milk and boil and wait till mixture thicken and then add sugar and boil till sugar melts and add coconut milk and close before a boil add dryfruits kesar and elachi syrup. Cool the kheer and then referigerate for 2 to 3hrs and serve.

Banana and Potato Tikki :
4 boiled bananas
1 boiled potato
1/2 tsp chilly powder
1/2 tsp pepper
1/2 tsp green chilly chopped
1/2 tsp amchoor
2tsp fresh coriander leaves
singhara ka atta for coating
oil or desi ghee for frying
rock salt taste
Tadka:
In tadka pan add 1tsp ghee and1/2 tsp jeera splutter add 1/4 tsp hing and  then add to tikki mixture

Preparation:
In a bowl mix tikki ingredients together and make round balla and flatten then ito tikki and coat with singhare atta and shallow fry till brown in colour on both sides. Serve with Pudina green chilly lemon juice chutney and  Imli and gur ki chutney.

Jimmy Khand ke koftey :
250gms Suran also called Jimmy khand
1 boiled potato
1/2 tsp chilly powder
1/2 tsp pepper
1/2 tsp green chilly powder
1/2 tsp amchoor
2tsp fresh coriander leaves
kuttu ka atta for coating
oil or desi ghee for frying

Gravy:
Dahi 2cups
1/2 tsp chilly powder
1/2 tsp pepper
1/2 tsp amchoor
2tsp fresh coriander leaves
rock salt to taste

Gravy Preparation:
In kadai add 1tsp ghee and1/2 tsp jeera splutter add 1/4 tsp hing and  then dry spices add dahi and garnish with coriander leaves.

Kofta Preparation:
In a bowl mix kofta ingredients together and make round balls and coat them with kuttu ka  atta and deep fry till brown. Serve with above gravy.

The festival of Navratri begins today

Navrati festival is the festival of the goddess which begins today and its a special day for all hindu women they sing praises of their goddess by reciting devotional hymns and also do the devotional dance ie garba and  dandiya while youngsters wear colorful costumes and dance dandiya before the goddess. But nowadays people  are more intrested in garba and dandiya dance programmes rather than and traditional  devotional  dancing style which has changed and nowadays people dance on latest bollywood songs. But change is good for some since youngsters are aware of their cultural festivals and they too celebrate with the same fervour and devotion. Navratri  is a time when people enjoy good food while there are some who keep  a  fast so that the goddess is pleased with them and grants them special wishes especially something which they desire the most.
Navratri recipes:
Rice Kheer:
3 cups milk
Badam 2tsp
Pista     2tsp
charoli  2tsp
elaichi   2tsp
kesar    2tsp
sugar    2tsp
 rice flour mixed in water 4tsp

Preparation:
In a kadhai boil the milk and then add the rice flour mixed in water and let the mixture thicken and then add sugar. After  2 minutes close flame and add elachi powder and dryfruits and  let the mixture cool in another bowl and then referigerate for 2 to 4 hrs . Serve in mud pots and garnish with Badam and pista slices.

Rabri :
1litre milk
3tbsp sugar
kesar few strands
elachi 1/4 tsp
3 tsp pista and badam slices

Preparation:
In a nonstick casserole put the milk to boil and reduce till half it will take 20 to 25 min stir occassionally then when mixture thickens add sugar and leave mixture to cool then add kesar and elachi . Tranfer mixture into another bowl and keep to referigerate 2to 3hrs and decorate with pista and badam slices.

Fresh Coriander leaves for garnish

Preparation:
In a kadhai add oil and then add jeera and rye land when it splutters add garlic and then  add  the curry leaves and then add onions green chilly, ginger  and fry tilll onions turn light brown and then add the dry spices lastly  add the potatoes and fry for 2 min. Then add fresh coriander leaves for garnish and serve with hot puris.

Patolya Konkani Naivedya for Devi :
1 cup coconut
1 cup jaggery
1 cup grated cucumber
2 cups rice flour
salt to taste
1/2 tsp haldi
Ghee as per requirement
turmeric leaves

Preparation:
In a bowl mix together  jaggery coconut cucumber salt rice flour and haldi together then apply ghee to washe and dried turmeic leaves and steam 10- 15 min and serve with hot ghee.

Sabudana and Sweet Potato kheer :
1tbsp Ghee
1 cup grated Sweet Potato
1/2 cup Jaggery
1 cup coconut milk
1/2 cup soaked Sabudana
1/2 cup grated coconut
1/4tsp elachi
1/4 tsp of kesar strands

Preparation:
In a pan heat ghee and fry the grated sweet potato add gur and then  add grated coconut and then add coconut milk and sabudana and then boil till sabudana is tranlusent and close  the flame and add elachi and kesar strands  for flavour.

My Memorable Birthday last month in September

Today I am remembering my birthday celebration I had last month. I loved the gifts I received from near and dear ones. I am thankful and grateful to all of them and what better way to thank them than to do it publicly in my blog. I love them all for they have been there for me like always. I want to give them a big hug and hope Lord bestows them with all blessings and rewards them all well and keep them in good health. I will always remember their feelings for me especially my Aunt who made time from her busy schedule and came along with me to buy my delicious walnut chocolate brownie cake wow what drooly yummy sight it was to see my freshly baked cake ready to be devoured by me and my near and dear ones. Like aways I blew candles thanked the Lord for giving me wonderful people surrounding me and making my day special I got a kiss and  a hug from everyone since I am their precious little one yipee. But sadly missed my brother who is far off  working in foreign land.But he made my day special by sending a special birthday cake for me a delicious  black forest cake but it arrived at  a later date so had double celebrations last month. Thanks a million to  my  brother my parents and my Aunt who made my day a special one. I had quite dinner later in  the evening with my family in a resturant of my choice tell you that fact that it rained that night when we  were leaving for dinner with thunder and lightning and heavy showers  wow it seemed like God to showered his blessings on me  but suddenly it stopped raining and we left for our family dinner date. Yeah! I had a memorable birthday.

I am posting chocolate walnut sizzling brownie recipe:
Chocolate Sponge:
150gm Butter
100gm Sugar
100gm Flour
50gm Cocoa
1/2tsp vanilla essence
3 eggs
1tsp baking powder
2bsp walnuts
salt a pinch

Preparation :
In a bowl add butter sugar and whisk till mixture fluffy then add  beaten egg yolks  which are seprated from egg whites

In another bowl  beat egg  whites in a seprately  till their fluffy and stiff  add them to the above mixture and add vanilla essence.

Then add sieved flour, baking powder, walnuts  and cocoa powder together to the above mixture and just fold it do not stir it but slowly fold mixture with a spatula.

Then add the mixture in a greased and flour dusted tin and bake at 180 degrees for 20 to 25 minutes or till knife poked in cake comes out clear.

Chocolate Sauce:
1 cup cream
1/2 cup dark sweet chocolate melted in microwave for 1min

Preparation:
Mix the above mixture together and heat them for 2min in a slow flame till coats back of the spoon .

Then in a hot  sizzling plate place a cake slice add scoop of vanilla ice-cream and pour  the chocolate sauce and serve with a cherry on top and garnish with chopped walnuts.



My favourite Chole Masala for Lunch

Yesterday mom prepared chole masala or chole curry like they say naam mein kya rakha mere bhai whats there in a name. I just love when mom takes trouble and prepares my favourite meal I would like to thank  her for the effort and trouble she has taken to do so. I will be posting recipe soon.  This brings me memories of my childhood when mom prepared chole puris for me and packed it carefully in a tiffin and brought it in my school. I was in a convent school and there lunch time was at 12pm sharp and mom like all mommies she would bring lunch for me since I was little girl and she wanted me to eat homemade hot piping food. Oh what memories I have of those lunch delights which she prepared. I will surely post those recipes  sooner or later it will be useful tiffin or lunch ideas for kids today.Has all my friends enjoyed moms food.

Here is my version of my moms recipe for delicious chole curry
Chole Masala recipe:
1 cup chole channa or chickpeas soaked overnight
1 cup onions sliced
1 cup tomatoes chopped or cup of tomato boiledand pureed
1 cup green gravy masala
1 cup fried potato cubes optional
1tsp whole garam masala spices
1tsp homemade red kashmiri or red bedki chilly powder
1tsp homemade roasted jeera dhaniya ie cummin & coriander masala powder
1/4tsp haldi or turmeric
1/2tsp chole masala powder
salt to taste

Green gravy recipe
1 cup coriander leaves
1 onion chopped roughly
1 tomato
1 inch ginger
5 to 6 cloves of garlic
1/2 tsp jeera or cummin
1 or 2 green chillies
1tsp red chilly powder
1/2tsp haldi
1tsp dhana jeera powder
Grind above ingridients and fry them in 1tsp oil and 1tsp ghee and keep aside.This  gravy can be used  has a base for many other dishes veg or non veg delights. If you like you can add a few leaves of  mint or pudina can be added if you want to enhance flavour but its best this way.

Preparation as follows
In a kadhai heat 2bsp ghee and 2bsp oil and add whole spices till splutter then add onions and  saute till brown and add chopped tomatoes and fry then add dry spices one by one add a little water so that spices dont get burnt  then add the green gravy and fry for some time then add boiled chickpeas add 1/2tsp of chole masala and add fried potatoes and add water has much thick or  thin you would like your gravy consistency  to be and boil for a minute or so. Then add the Tadka. and serve with hot rotis.

Tadka
In a pan 1tsp oil and 1/2tsp garlic finely chopped and 1 whole red chilly

 Serve with hot puris or phulkas or bhaturas but taste good even with  plain rice and rotis and sliced onion (laccha pyaaz) coriander and lemon sliced

Hi friends this mayona happy to be blogging on the net and right now I am still thinking about what to write has I have not written anything other than email online this full fledged blog but I will try. Its nice to see so many of my friends who are blogging day in and day out they have so much to say and write while I am still pondering on my welcome lines. I felt I should be witty at first but then I felt thats a natural trait then later on felt  I should talk on relevant topics but everyone does that whats so new about it. I got to say right now I will be just be myself. I will focuss on few things happening around me that will be good beginnning since I am not avid writer. I am just writting down some few welcome lines jotted dotted down by me. I will do a better post later on. Right now I am feeling wonderful being online among so many bloggers and it makes me glad that I am writing something which makes me happy.
